Avocado adds a lot of creaminess and healthy fat, so this shake is filling. Dates add sweetness and a little of the vanilla plant protein helps cover the earthy flavor of the spinach. It works well when you need something to carry you for a few hours.
Ingredients
Makes 1 serving.
- 1 scoop vanilla plant protein powder (pea/rice blend, about 32 g)
- ½ ripe avocado
- 1 ½ cups fresh baby spinach
- 1 Medjool date, pitted
- 1 ½ cups unsweetened almond milk
- 1 tbsp lime juice
- 3 ice cubes
Method
- Add the almond milk and spinach to the blender and blend until the leaves disappear.
- Add the avocado, date, protein powder, lime juice, and ice.
- Blend on high for about a minute, until smooth.
- Taste and add a few drops of stevia if you want more sweetness.

Tips

- Half an avocado is enough for a thick, creamy shake.
Swaps and variations
- Add a tablespoon of hemp hearts for more protein and fat.
- Use a banana in place of the date.
