A frappe is blended coffee and ice. Freezing the coffee in cubes first means the drink stays strong and does not water down. This is a dessert-style coffee drink that also delivers a full serving of protein.
Ingredients
Makes 1 serving.
- 1 scoop chocolate whey protein powder (about 30 g)
- 1 cup strong brewed coffee, chilled
- ½ cup 2% milk
- ½ tbsp unsweetened cocoa powder
- 1 tbsp sugar-free caramel syrup
- 1 pinch xanthan gum
Method
- Freeze one cup of strong coffee in an ice cube tray, at least four hours or overnight.
- Add the frozen coffee cubes, milk, protein powder, cocoa, and caramel syrup to the blender.
- Add the xanthan gum if you have it. It keeps the frappe thick and smooth.
- Blend on high until slushy, about a minute. Add a splash of milk if the blender stalls.

Tips
- Xanthan gum is optional. A tiny pinch is plenty, and more makes the drink gummy.
- Make a full tray of coffee cubes at once. They keep for weeks.
Swaps and variations
- Use vanilla protein for a vanilla frappe.
- Top with whipped cream and a caramel drizzle.
