Hot liquid can curdle or clump whey. The trick is to mix the protein with cold milk first, then stir in the hot milk slowly. Casein protein handles heat better if you have it.
Ingredients
Makes 1 serving.
- 1 scoop chocolate casein protein powder (about 33 g)
- 1 ¼ cups 2% milk
- 1 tbsp unsweetened cocoa powder
- 0.125 tsp peppermint extract
- 1 tbsp pure maple syrup
- ¼ tsp vanilla extract
Method
- Whisk the protein powder and cocoa with a quarter cup of cold milk in a mug until it forms a smooth paste.
- Heat the remaining milk until steaming, around 150°F (65°C).
- Stir the hot milk into the paste slowly, then add the maple syrup, vanilla, and peppermint.
- Top with whipped cream and a crushed candy cane.

Tips
- Do not boil the milk. Overheating can leave a skin on top and clump the protein.
- A milk frother is a good tool here.
Swaps and variations
- Use whey chocolate protein, but mix it with cold milk first.
- Stir in a spoonful of almond butter for a thicker cocoa.
