Pumpkin puree is thick and mild, which makes it a good pudding base. Casein sets it up into something close to pie filling. It works as dessert or a breakfast you can make the night before.

- ½ cup canned pumpkin puree
- ½ cup plain nonfat Greek yogurt

- Add the casein and stir until thick and smooth.
- Chill for at least an hour.
- Top with a crushed graham cracker or whipped cream.

Tips
- Casein gets very thick in the fridge. Stir in a splash of milk before eating if needed.
- Use plain pumpkin puree. Pumpkin pie filling is already sweetened and spiced.
Swaps and variations
- Use whey vanilla and a little less yogurt for a looser pudding.
- Add chopped pecans.
