Beet Berry Recovery Smoothie

A bright magenta smoothie that tastes sweeter than it sounds, made with cooked beets and frozen berries.

Beet Berry Recovery Smoothie

Beets blend into a smoothie with a mild, earthy sweetness that the berries cover. Use cooked beets, either steamed at home or from a vacuum-sealed pack. Raw beets are too hard for most blenders.

Ingredients

Makes 1 serving.

  • 1 scoop vanilla whey protein powder (about 30 g)
  • ½ cup cooked beets
  • ¾ cup frozen mixed berries
  • ½ cup orange juice
  • ½ cup water
  • ½ tsp fresh ginger, grated

Method

  1. Add the orange juice, water, protein powder, and ginger to the blender.
  2. Add the cooked beets and frozen berries.
  3. Blend on high for a full minute, until no beet pieces remain.
  4. Rinse the blender soon after. Beet juice stains plastic.

Tips

  • Vacuum-packed cooked beets save time. Avoid pickled beets, which taste of vinegar.
  • Expect a vivid pink color and a harmless change in the color of your urine the next day.

Swaps and variations

  • Add a spoonful of Greek yogurt for a creamier smoothie.
  • Add a squeeze of lime for brightness.
