Kale Pineapple Coconut Smoothie

A bright tropical green smoothie where the fruit does most of the talking.

Kale Pineapple Coconut Smoothie

Kale has a stronger flavor than spinach, so it needs a strong partner. Pineapple is a good match because its acidity and sweetness cover the bitterness. Remove the thick stems before blending, since they are fibrous.

Ingredients

Makes 1 serving.

  • 1 scoop vanilla whey protein powder (about 30 g)
  • 2 cups kale leaves, stems removed
  • 1 cup frozen pineapple chunks
  • 1 cup coconut water
  • ½ medium banana
  • 1 tbsp lime juice

Method

  1. Strip the kale leaves from the stems and add the leaves to the blender with the coconut water.
  2. Blend for 30 seconds until the kale is finely chopped.
  3. Add the protein powder, pineapple, banana, and lime juice.
  4. Blend for another 45 seconds, until smooth.

Tips

  • A high-speed blender handles kale well. With a standard blender, blend the greens longer.
  • Massaging raw kale with your hands for a minute softens it and reduces bitterness.

Swaps and variations

  • Use spinach for a milder smoothie.
  • Add a few mint leaves.
