Blended cottage cheese is smooth and tangy, like cheesecake filling. Strawberries sweeten it and give it its color. A crushed graham cracker on top turns it into a deconstructed dessert.
Ingredients
Makes 1 serving.
- 1 cup low-fat cottage cheese
- ½ scoop vanilla whey protein powder (about 30 g)
- ½ cup fresh strawberries
- 1 tbsp honey
- 1 tbsp lemon juice
- ½ tsp vanilla extract
- 1 graham cracker sheet, crushed
Method
- Blend the cottage cheese, protein powder, half the strawberries, honey, lemon juice, and vanilla until completely smooth.
- Spoon into a glass and chill for an hour.
- Slice the remaining strawberries and pile them on top.

Tips
- Blend longer than you think you need to. Cottage cheese has to be fully smooth for this to work.
- A pinch of salt makes the strawberries taste sweeter.
Swaps and variations
- Use blueberries for a blueberry cheesecake version.
- Use Greek yogurt in place of the cottage cheese.
