This is the lightest recipe in the green group. Cucumber is mostly water, so the drink tastes cool and clean, closer to a spa drink than a smoothie. Use an unflavored or lightly vanilla protein so it does not compete with the mint.
Ingredients
Makes 1 serving.
- 1 scoop unflavored whey protein powder (about 30 g)
- 1 ½ cups cucumber, chopped
- 2 tbsp fresh mint leaves
- 1 tbsp lime juice
- ¾ cup coconut water
- 4 drops liquid stevia
- 6 ice cubes
Method
- Add the coconut water, lime juice, mint, and cucumber to the blender.
- Add the protein powder, stevia, and ice.
- Blend until smooth, about 45 seconds.
- Strain for a clearer drink, or leave it as is for extra fiber.

Tips
- Peel waxy cucumbers. English cucumbers can stay unpeeled.
- Add the mint just before blending. It turns bitter if it sits crushed.
Swaps and variations
- Add a green apple for more sweetness.
- Use sparkling water to top the drink.
